Vegetable Fritters

Delicious gluten and dairy free fritters packed with vegetables. Perfect for dinner at home or to add to lunch boxes too!
Serves: 3-4
  • 100g / 0.75 cup gluten free plain flour (or gluten free all purpose flour)
  • 1 tsp baking powder
  • 1 medium egg
  • 100ml / 0.4 cup dairy free milk
  • 200g / 7oz chopped frozen mixed veggies
  • 2 spring onions, chopped
  • ½ tsp smoked paprika
  • salt and pepper to taste
  1. Sieve the flour and baking powder into a large bowl. Add the milk and eggs and mix well.
  2. Add the frozen veggies to a bowl or jug, cover with boiling water and microwave on high for 1-2 minutes until fully defrosted. Drain well.
  3. Stir in the drained mixed veggies, spring onion and paprika and mix until well combined.
  4. Season to taste with salt and pepper.
  5. Heat a little oil in a frying pan and add in a heaped tablespoon of the fritter batter. Press down gently with a spatula and repeat until the frying pan is full. I was able to cook 4 fritters at a time in my frying pan but it will depend on the size of yours. I made a total of 8 fritters from the batter.
  6. Fry the fritters on a medium heat for approximately 4 minutes on either side, or until they are golden brown and cooked through.
The cooked fritters will keep in an airtight container in the fridge for up to 3 days. Alternatively, they can be frozen by wrapping them individually in parchment paper and placing in a freezer bag. Defrost them before warming in the oven or microwave.
